Some weeks, cooking is a battle. It feels like everything is stacked against getting into the kitchen and creating food.
This past month we've been incredibly busy traveling and searching for a new home. We've outgrown our current digs and have been longing for a backyard, a little more space to take photos (me), and most importantly, a little more space to have friends and family visit.
More details on all that to come. For now, I wanted to share what (little) I have been cooking to hopefully inspire you with some ideas of what to do with the very last of summer's harvest. And to remind you that you don't have to create amazing 3-part meals every single night.
Because lately, the simpler the food the better, especially in such hectic times!
White Bean Ragu Flatbreads with Hummus
Farmers Market ingredients used: tomatoes
Other ingredients used: white beans, hummus, pita bread, carrots, onions, capers, red bell pepper, green onions
Notes:
- This was a "use up all the leftovers in the fridge and put it on top of pita" kind of meal and it was pretty delicious. Was also excited because I realized I can get pita bread sans plastic at my grocery store salad bar (just put it straight into my cloth bag and paid per pound).
Roasted Cauliflower, Romanesco and Fennel with White Bean Hummus and Basil Olive Oil
Farmers Market ingredients used: cauliflower, romanesco, fennel, basil
Other ingredients used: white beans, tahini, olive oil, turmeric
Notes:
- When I'm out of ideas for dinner, I roast vegetables and while they roast, I figure out what to pair them with. This time I had some hummus on hand so all I really needed to do was blend up some fresh basil and olive oil to drizzle over the top. Yum!

Roasted Sweet Corn (Street Festival Corn)
Farmers Market ingredients used: corn
Other ingredients used: butter, harissa, salt and pepper
Notes:
- There is 100% nothing wrong with just eating corn for dinner. These roast to perfection in just 30 minutes, in their husks. Top 'em how you like 'em!
